For me, bowls are one of my favourite lunches. They are easy to make and you can literally put in anything. I love this BBQ Seitan Burrito Bowl, as it has healthy tortilla chips with it with are super easy to make and it is packed with vitamins and plant-based protein! Let me know what you think!

Ingredients
BBQ Seitan:
200 g seitan
1 red pepper
1 garlic clove
2 tsp BBQ sauce
1 tsp smoked paprika powder
Tortilla Chips:
2 tortilla wraps
1 tbsp tomato paste
2 tbsp olive oil
1 tsp smoked paprika powder
1/2 tsp ground cumin
200 g cooked rice
70 g sweet corn
100 g black beans
1 avocado
salad leaves
2 tbsp crème fraiche
1 lime
fresh parsely or cilantro
salt
pepper
Method
1. Preheat the oven to 200°C.
2. Mix the tomato paste, olive oil and spices. Cut the tortilla wraps into 8 triangles (the same way you would cut a pizza). Put them on a baking tray covered with baking paper and brush with the tomato-spice paste. Bake for 5 minutes, turn around brush with the tomato-spice paste again and bake for another 5 minutes. Put on a cooling grid and let cool for a few minutes.
3. Meanwhile, cut the red pepper into cubes and finely chop the garlic. Heat some olive oil in a pan and fry for 5 minutes. Add the seitan and smoked paprika powder, and fry for another 2 minutes. Add the BBQ sauce and a splash of water and let simmer for 5 minutes.
4. Build the bowls: Put a generous handful of salad leaves in your bowl. Add the rice, sweet corn, black beans, slices avocado and BBQ seitan. Garnish with crème fraiche, lime slices and fresh parsley or cilantro. Season with salt and pepper, and serve with the tortilla chips.
