This salad is incredibly fresh and the pomegranate seeds add a nice texture and sourness to the salad. Celery root is such an amazing vegetable, an can be eaten in various ways raw or cooked.

Ingredients
1 celery root
1 pomegranate
Dressing:
1 lemon (juice)
1 tbsp mustard
1 tbsp grainy mustard
2-3 tbsp apple cider vinegar
150 g yoghurt
3 tbsp sour cream
3 tbsp sunflower oil
1 tsp garlic powder
1/2 tbsp agave syrup
1 handful fresh chives
salt
pepper
Method
1. Peel the celery root, and finely grate it. Sprinkle with the lemon juice.
2. Take out the pomegranate seeds and add to the grated celery.
3. Finely chop the chives and mix with all the other ingredients for the dressing (except from the lemon juice which is already on the grated celery). Season with salt and pepper and pour over the celery and pomegranate seeds.
