Cherries and almonds are just the perfect combination! The crumble tastes like fresh marzipan and is super crispy and crumbly. When I had the idea for this recipe and didn't expect it to turn out THIS GOOD! It is definitely an absolute must try and can also easily be served as a healthier dessert. Serve it with soy yoghurt or vanilla ice cream.

Ingredients
60 g jumbo oats
40 g ground almonds
20 g white almond butter
20 g split almonds
1 tsp vanilla extract
1 pinch salt
350 g cherries (in a jar or fresh)
sugar or agave syrup (optional)
Method
Preheat the oven to 180 °C.
Drain the cherries, if using cherries in a jar, or remove the pits from the cherries and halve them if using fresh cherries. Put them in a small ovenproof dish and add some sugar or agave syrup if you would like it sweeter.
Put the oats into a food processor and mix for a few seconds only; there should still be some bigger piece.
In a bowl, combine the roughly ground oats, the ground almonds, white almond butter and split almonds. Add a pinch of salt and the vanilla extract. Use your hands to make it into a crumble. Distribute the crumble over the cherries and bake for 15-20 minutes until golden brown. Serve with natural soy yoghurt or enjoy it by itself.
