A yummy and healthy stew to eat between the festive days if you fancy something lighter. This will keep you full for longer and deliver several important vitamins. And it is super easy and quick to prepare.

Ingredients
2 garlic cloves
3 spring onions
1 large potato
1 red pepper
150 g carrots
3 celery sticks
2 tbsp tomato paste
500 ml vegetable stock
75 ml red wine
2 tsp smoked paprika powder
2 tsp dried oregano
2 tsp dried thyme
1 bay leaf
salt
pepper
Method
1. Finely chop the garlic and spring onions (you can also use 1 regular onion instead). Cut the potato, red pepper, carrots and celery into cubes.
2. Heat some oil or vegan butter in a pot and fry the onion for 3 minutes. Add all the other vegetables and fry for another 3-5 minutes. Add the tomato paste and herbs. Deglaze with vegetable stock and red wine. Let simmer for about 30 minutes, until the potatoes are soft.
3. Season to perfection with salt and pepper.
