Pistachios are probably my favourite nuts, and I don't know why it took me so long to make a granola with pistachios?! It is the perfect topping for some natural yoghurt with fresh berries or to level up your porridge. This batch will probably last you for 2 weeks and won't every buy granola again as you will see how easy it is and how great it tastes! Portion: 1 large jar
Ingredients
500 g jumbo oats
75 g pistachio butter
100 g agave syrup
150 g unsalted pistachios
1 pinch salt
100 g dried cranberries
Method
Preheat the oven to 200 °C.
Roughly chop the pistachios.
Mix the oats with the pistachio butter, the agave syrup and a pinch of salt. Give a good stir until all the oats are coated with the pistachio butter-agave mixture. Add the chopped pistachios.
Put the mixture on a baking tray with baking paper and bake for 25 minutes until it is golden brown. Give it a stir every 5 minutes.
Let cool completely. Roughly chop the dried cranberries and add to the granola.
