Harissa really puts halloumi to the next level, it is spicy and full of flavours. The dip keeps the whole dish fresh and helps to ease the heat. You definitely need to give these halloumi skewers a try!

Ingredients
Skewers:
225 g halloumi
1 red pepper
16 green olives
1/2 lime (juice)
2 tsp harissa paste
Dip:
4 tbsp natural yoghurt
1 tbsp tahini
2 tsp harissa paste
1/2 lime (juice)
4 skewers
Method
1. Cut the halloumi into 16 pieces. Mix lime juice and harissa paste and pour over the halloumi cubes. Mix well.
2. Cut the pepper into squares of about 5-6 cm.
3. Alternatively skewer a piece of halloumi, a piece of red pepper and an olive until all the skewers are full.
4. Grill on a barbecue or in a grill pan until the halloumi is golden brown and crispy.
5. Meanwhile, mix natural yoghurt, tahini, harissa paste and lime juice for the dip. Season with salt and pepper and serve with the skewers.
