I love to switch up my breakfast from time to time and adapt it to the current season. I'm a big fan of strawberries (I mean who isn't?) and I love putting this warm strawberry compote on top of the cold soy yoghurt. For the crunch I've added my all time favourite granola (and first recipe) from my blog, so make sure you try that one too!

Ingredients
150 g strawberries
1 tsp sugar
1/2 tsp vanilla extract
3-5 tbsp granola
175 g natural soy yoghurt
Method
Cut the strawberries into quarters and put in a small saucepan with the sugar and vanilla extract. Bring to a boil while stirring and let simmer on low heat for a couple of minutes.
Put the soy yoghurt in a bowl, distribute the strawberry compote and granola on top.
