Vegan Oktoberfest/Bavarian Style Burgers


Oktober is almost over, but I did not want to withhold the recipe for these yummy Oktoberfest burgers from you. The burger buns and patties are homemade with natural ingredients and 100% plant-based. You will certainly impress all your friends and family with these ones.

Ingredients


Pretzel Rolls:

75 ml water (warm)

7 g dried yeast

75 ml plant-based milk

300 g flour

20 g margarine (soft)

1 tsp salt


Burger Patties:

2 tins butter beans

3-4 tbsp flour

3 tsp fresh or dried parsley

4 spring onions

2 garlic cloves

1 tsp cumin

salt

pepper


Honey Mustard Sauce:

4 tsp honey

4 tbsp mustard


Toppings:

1 jar Sauerkraut

salad leaves

 

Method


1. Mix the water with the yeast and sugar and let sit for 10 minutes.


2. Add the plant-based milk, flour, salt and softened margarine, and knead the dough for 5-10 minutes until smooth. Last, add the salt. On your work surface, shape the dough into a ball and flour the bowl. Place the dough ball in the bowl, cover it and let it rise for 1-2 hour.


3. Divide the dough into 4-6 pieces and form small dough balls. Let rise for another 30 minutes.


4. Preheat the oven to 200 °C.


5. Bring the water with the baking soda to the boil. Place a dough ball on a slotted spoon and immerse it in the hot, but no longer boiling water for about 30 seconds each side. Then put the roll on the tray, and sprinkle with sesame seeds.


6. Cut the rolls crosswise and bake the rolls for about 15 minutes.


7. For the burger patties, blend the butter beans into a smooth mixture. Add flour, parsley, cumin, salt, and pepper. Finely chop the onions and garlic and add to the mixture. Mix with your hands to ensure all the ingredients are well combined. Divide it into 4-6 equal parts and form 4 large or 6 smaller burger patties.


8. Heat some olive oil in a pan and fry the burgers for 3 minutes on each side until they are golden brown. Transfer to the oven and bake for 10 minutes.


9. Heat the Sauerkraut in a small pot. Mix the mustard with the honey.


10. Stack the burgers: top the buns with the patty, some Sauerkraut, salad leaves and lots of honey mustard sauce.
